Mary’s Green tomato relish
My neighbor, Mary, shared her Green Tomato Relish recipe with me last year and it has been a big hit with our family. It sure uses up all those last of the season green tomatoes!
Green Tomato Relish
1 gallon chopped green tomatoes
3 cups chopped carrots
2 red and 2 green bell peppers
1 medium head of cabbage
4 medium onions
Grind and cover with 1/2 cup of Canning Salt. Mix well and let stand over night or for several hours. Rinse well and drain.
3 Tbls. mustard seed
2 Tbls. celery seed
6 cups sugar
4 cups cider vinegar
2 cups water
1 Tbls canning salt
Heat liquids, sugar and spices. Add veggies and boil 30 minutes. put in hot sterilized jars and seal. Process in hot water bath for 10 minutes.
I have been told that the best way to enjoy this relish is with a spoon.
That is what I have been getting ready on this cool and rainy morning.
Logan, our maltese rescue dog, has developed an onery habit and we are working with him to break it. He really hates the front door for some reason. I am waiting for the UPS man to ring the door bell and I will get in between Logan and the door and tell him “back” and see if it quiets him down. I need to find a couple of spray bottles to fill with 1 part cider vinegar and 1 part water and spray him when telling him back. I was told to not use any other type of vinegar as it could do harm to the animal. Ellen and Tracy are helping me to retrain Logan, I think I have him too spoiled and he thinks this is all his house and we are the guests.
The wood burning stove project is slowing moving along. Richard is reinforcing the floor from the basement just because we are being overly cautious but the stove is heavy. It has soapstone sides and is brown metal color, very pretty. I am excited to get it in and see how well it takes our heat bill down.
The record for largest pumpkin is from a fellow from Ohio, I believe it is 1658 pounds. We had a 60 pound one, and it was really delicious. Next year we want to grow a really large one in the side yard where it will be out of the way. Our seed packet states that they will grow to 300 pounds. Our second planting of beets did well, I didn’t get all of them pulled before this hard freeze hit so the tops are gone but we will pick the beets and see what they are like.
